While you can use them anytime of year, we love cozying up with a warm, slow cooker meal during the winter months! Ingredients

  • 1.5 lbs Ground Beef browned
  • 1 Onion chopped
  • 2 cups Tomato Juice
  • 15 oz Tomato Sauce
  • 10.5 oz Beef Broth
  • 2 (10.75) oz Cream of Potato Soup
  • (2) 15 oz Kidney Beans
  • 1 pkg Taco Seasoning
  • Fritos, Sour Cream, Shredded Cheese garnish

Instructions

  1. Brown the ground beef.

  2. Add all ingredients to slow cooker and cook on low for 6 hours.

  3. Garnish with Fritos, Sour Cream, Shredded Cheese, etc! Enjoy!

Erin’s Favorite Chili

Best Ever Slow Cooker Chili


Servings 12 people

Ingredients

  • 2 lbs Ground Beef
  • 4 Tbsp Extra Virgin Olive Oil
  • 1 Yellow or Red Onion, chopped
  • 1 Green Bell Pepper, chopped
  • 4 cloves Garlic, minced
  • 1/4 cup Parsley, chopped
  • 2 Jalapeno Peppers, chopped optional
  • 3 Tbsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Sugar
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Black Ground Pepper
  • 1/4 tsp Cayenne Pepper
  • 46 oz Tomato Juice
  • 28 oz Diced Tomatoes
  • 15 oz Tomato Sauce
  • 16 oz Kidney Beans, Drained and Rinsed
  • 16 oz Pinto Beans, Drained and Rinsed

Instructions

  1. In a large skillet, cook ground beef over medium-high heat until no longer pink. Transfer the meat to a bowl. Drain excess grease from skillet, but do not clean.

    2. Add the olive oil to the skillet. Add the onion, green pepper, garlic, parsley and jalapeño peppers (optional) and cook over medium heat, stirring occasionally, until onions are soft and fragrant (about 5 minutes). Remove from heat and add the chili powder, cumin, sugar, oregano, salt, pepper and cayenne pepper. Stir until combined.

    3. Add the meat-veggie mixture to the slow cooker along with the tomato juice, diced tomatoes, tomato sauce, kidney beans and pinto beans to the slow cooker. Cook on low for 7 to 8 hours. Serve warm with cheese, sour cream, Fritos, green onions, whatever your heart desires! 

Creamy Fiesta Tortellini Soup

Ingredients

  • 4 cups Chicken Cooked and Shredded
  • 5 cups Broth Can also use leftover juice from chicken tacos, supplement with water as needed.
  • 5 slices Bacon Cut and Cooked
  • 1 Tbs Butter
  • 1 Tbs Flour
  • 1 cup Onion Diced
  • 3 cloves Garlic Minced
  • 2 Carrots Shredded
  • 1/2 tsp White Pepper Can substitute Black Pepper
  • 1/2 tsp Poultry Seasoning
  • 20 oz Tortellini
  • 1 cup Heavy Cream Can substitute Milk
  • 1/5 cups Pepper Jack Cheese Shredded or Diced

Instructions

  1. Sauté Onions, Garlic and Carrots in Butter. Once onions are translucent, add flour. Cook an additional 2 minutes.

  2. Add sautéd vegetables to slow cooker along with Shredded Chicken, Broth, Bacon, White Pepper and Poultry Seasoning. Cook on High in slow cooker for 2 hours.

  3. Add Heavy Cream, Pepper Jack Cheese and Tortellini. Cook on High for 1 additional hour.

Erin’s Roasted Red Pepper Chicken Soup

Roasted Red Pepper Chicken Soup

Ingredients

  • 1 lb Chicken Breast, skinless
  • 2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 Jar Sun Dried Tomatoes, Sliced
  • 2 Cups Chicken Broth
  • 2 Cartons Roasted Red Pepper Tomato Soup
  • 1 Jar Creamy Pesto
  • Shredded Gouda
  • Croutons

Instructions

  1. Add sliced sundried tomatoes to the bottom of a slow cooker. Put chicken on top with garlic powder and onion powder on top. Top with chicken broth and cook on low for 6 hours.

  2. Shred chicken and place into Perfect Pot. Pour any remaining juice and sun dried tomatoes from the slow cooker into the pot.

  3. Add the roasted rep pepper soup along with the jar of creamy pesto. Bring to a boil and then simmer and stir for 30 minutes until well blended.

  4. Top with shredded gouda cheese and croutons! Enjoy!

The Best Chili

I make this chili regularly! Especially during the colder months, but it’s a great, easy, meal to enjoy year around! To drop off to friends or family, you can transfer it to their crockpot or have it in containers ready to freeze!

Ingredients

  • 1 lb Ground Beef (I use ground turkey!)
  • 2-3 slices bacon
  • 1 can black beans
  • 1 can kidney beans
  • 1 Tbsp garlic powder
  • 1 tsp dried basil
  • 1 Tbsp oregano
  • 1/2 bell pepper
  • 1/2 yellow onion
  • 1 can tomatoes with juice
  • 1 Cup beef stock
  • 1 Cup water
  • 1/2 can tomato paste
  • 1 tsp black pepper
  • 4 Tbsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tsp cumin

Instructions

  1. Brown meat in skillet on medium-high, add to crockpot

  2. In a different pan, cook the bacon until crispy. Crumble and add to crockpot

  3. Chop Pepper and Onion, Cook the chopped onion and pepper in the bacon drippings for about 5 minutes or until onions are translucent. Add to the crockpot.

  4. Add in the drained beans, diced tomatoes, tomato paste, beef stock, and water.

  5. Season with chili powder, garlic, oregano, cumin, basil, salt, pepper, and paprika. Stir to blend, then cover and simmer over high heat for 2 hours, stirring occasionally. Switch to low heat for another 2 hours or as long as you desire.

  6. After the first 2 hours, taste, and adjust salt, pepper, and chili powder if needed. The longer the chili simmers, the better it will taste!

  7. Enjoy!

  • 1 Can Black Beans, Drained

  • 2 C Milk Can sub a mix of milk and heavy cream if desired

White Chicken Chili

Easy crockpot recipe for a busy night on the go!

Ingredients

  • 2 Prepared Chicken Breasts shredded
  • 1 TBSP Butter for sauteing, optional
  • 1 C Onion
  • 3 cloves Garlic
  • 2 cans Great Northern Beans drained
  • 2 cans Diced Green Chilis
  • 1 1/2 – 2 C Chicken Broth
  • 1/3 can Corn
  • 1/2 C Heavy Whipping Cream
  • 4 oz Cream Cheese cubed
  • 1 1/2 C Pepper Jack Cheese shredded
  • 1 tsp Salt
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1/2 tsp Pepper
  • 1/4 tsp Cayene

Instructions

  1. Shred or cube precooked Chicken

  2. Sauté Onions and Garlic until fragrant, if desired.

  3. Add all ingredients to large crock pot.
    Note: For a more soup like consistency, use 2 cups of Chicken Broth. For a thicker chili use 1 1/2 cups.

  4. Cook on high for 2 1/2 hours or low for 5 hours. Garnish with Cheddar Jack Cheese, Sour Cream and Green Onions if desired.
    Note: Can cook on low setting for longer than 5 hours if required by your schedule.

Lauren’s Crockpot Tortellini Soup

Ingredients

  • 1 chopped onion
  • 2 TBSP minced garlic
  • 1 TBSP Italian seasoning
  • 4 cup chicken broth
  • 28 oz diced tomatoes
  • 1 lb uncooked italian sausage
  • 10-14 oz small frozen cheese tortellini
  • 1/2 cup shredded parmesan cheese
  • 4 cups baby spinach
  • 3/4 cup heavy whipping cream

Instructions

  1. Add olive oil to a large pan over medium heat

  2. Cook the italian sausage and onion in the pan until cooked through.

  3. Add minced garlic and italian seasoning to pan, and cook an additional one minute.

  4. Put the sausage mixture into a crockpot, along with the chicken broth and diced tomatoes. Stir together.

  5. Cook the ingredients in the crockpot for  4-5 hours on high or 7-8 hours on low. 

  6. 30 minutes before the cooking time is done, add the tortellini, parmesan cheese, fresh spinach and heavy cream.

  7. Enjoy!

Chicken Cream Cheese Chili

Crockpot Chicken Cream Cheese Chili

Taco Tuesday’s getting Fallified! This one is a crowd pleaser and so easy to make! For those chilly days that you want a taco but also want chili, this recipe has you covered and it’s even better as leftovers!!

Ingredients

  • 1-2 lbs Chicken Breast [frozen]
  • 1 can Petite Diced Tomatoes
  • 1/2 can Rotel Tomatoes [for more heat, add in full can of rotel and ½ can diced tomatoes]
  • 1 can Corn [do not drain]
  • 1 can Black Beans [drained and rinsed]
  • 1 pkg. Ranch Dressing Mix
  • 1 tbsp. Cumin
  • 1 1/2 tsp. Chili Powder
  • 1 tsp. Onion Powder
  • 1 8 oz. pkg. Cream Cheese

For Serving:

  • Shredded Cheese
  • Avocado
  • Tortilla Chips
  • Rice

Instructions

  1. Place Frozen Chicken in Slow cooker

  2. Top Frozen Chicken with diced tomatoes, rotel, corn, beans, ranch dressing mix, cumin, chili powder and onion powder.

  3. Stir to combine.

  4. Place Cream Cheese on top.

  5. Cover and cook on low for 6-8 hours, stirring periodically.

  6. In crockpot, shred chicken using two forks.

  7. Stir well until cream cheese is mixed.

  8. Serve with chips, over rice or with your favorite toppings [we use black olives, hot sauce, avocado slices]!!

The ultimate comfort food – beef & noodles! Your slow cooker does all of the work for you, you come home to a delicious smelling house and an even better tasting meal!

Ingredients

  • 1 2-3 lb Beef Roast
  • 1 envelope Beefy Onion Soup Mix
  • 1 can Mushroom Soup
  • 1 bag Egg Noodles

Instructions

  1. Place roast in slow cooker. Salt and Pepper on both sides. Add Beefy Onion Soup Mix and Mushroom Soup. Cook on low for 8 hours. Shred, return to slow cooker.

  2. Prepare noodles as directed on package. Stir into shredded beef and serve! Tip: I like to use beef broth to cook the noodles for a little extra flavor!

  • 2 Large Chicken Breasts
  • 1 packet Taco Seasoning
  • 1 packet Ranch Dressing Mix

  1. Add all ingredients into slow cooker. Cook on low for 4 hours or high for 2 hours. Shred chicken, return to juice for 30 minutes on low.

Recipe Notes

Double the recipe, saving half for another easy meal later in the week. Works great for quesadillas, soups, nachos and casseroles.

Easy 3 Ingredient Recipe for a quick dinner! Use meatballs for meatball subs or spaghetti!

  • 1/2 bag Frozen Meatballs
  • 1 jar Spaghetti Sauce
  • 1/2 bottle Parmesan Cheese

Instructions

  1. Pour all ingredients into slow cooker. Cook on High for 4 hours.

  2. Serve as meatball subs or with spaghetti. Tip: I like to bake sub buns with butter, garlic powder and parmesan cheese before topping with meatballs. 5 minutes at 400 degrees. YUM!

Katy’s Granny’s Southern Roast

There’s nothing like cozying up with roast on a chilly day. It’s simple, but don’t let it fool you – it’s delicious! This recipe is special to me because it’s from my Granny. She passed away in 2013, so using one of her recipes is a way for me to feel connected to her and keep her spirit alive. I hope you love this roast as much as I do! -Katy

Ingredients

  • 1-2 lbs Chuck Roast
  • 1 tbsp Olive Oil
  • 1/2 cup Water
  • 1 1/2 cup Beef Broth [low sodium or regular]
  • 2 pkg. Brown Gravy [low sodium or regular]
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1/2 tsp Sea Salt [optional]
  • Pepper to taste
  • 7-8 Small Yukon Potatoes [cut in half or quarters]
  • 5 Large Carrots [cut into 1/2 inch pieces]

Instructions

  1. Heat olive oil in a large pan on medium to high heat.

  2. Season the meat with a sprinkle of garlic powder and pepper then sear it in the pan until the outside is brown on both

  3. Cut the potatoes in half and the carrots into ½ inch pieces and throw both into the crockpot.

  4. Put your two packages of brown gravy mix into the crockpot.

  5. Next, add in your water, beef broth, onion powder, garlic powder, and salt.

  6. Stir and cook on high for approximately 4 hours. Then turn on low for another 2 hours or as long as you’d like. Enjoy!

  • 1 lb Ground Beef Browned
  • 1 lb Ground Sausage Browned
  • 1 lb Velveeta
  • 3/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/8 cup Milk
  • 24 Hawaiian Rolls

Instructions

  1. Brown Hamburger and Sausage in large skillet. Drain.

  2. Add browned meat, cubed Velveeta, Onion Powder, Garlic Powder and Black Pepper into Crock Pot. Cook on low for approximately 2 hours, until cheese is melted.

  3. Add a splash of milk, approximately 1/8 Cup. Stir. Switch Crock Pot to Warm setting, serve with Hawaiian Rolls.

Beer Chicken and Cheese Sandwiches

Beer Chicken & Cheese Sandwiches

Beer, Chicken and Cheese! Not much more you can ask for in this recipe! A household favorite for Saturday football games, Fall nights and those quick and easy meals that are crowd pleasers!

Ingredients

  • 1-2 lbs Chicken Breast [Frozen]
  • 12 oz Beer [we prefer Oktoberfest but any Ale will work!]
  • 2 Cloves Garlic [minced]
  • 1 tsp. Salt
  • 2 tbsp. Butter
  • 2 tbsp. Flour
  • 1/2 cup Beer
  • 3/4 cup Milk
  • 8-10 oz Sharp Cheddar Cheese
  • 2 tbsp. Chives [chopped]
  • Pretzel Rolls
  • Dijon Mustard [for serving]

Instructions

  1. Place Frozen Chicken, 12oz Beer, minced garlic and salt in a slow cooker.

  2. Cover and cook on low heat for 8 hours.

  3. After 8 hours; remove chicken from the slow cooker and shred [Chicken should shred easily].

  4. Remove some of the liquid from the slow cooker.

  5. Place shredded chicken back in slow cooker with remaining liquid

  6. In a small pan, melt the butter over medium heat.

  7. Once melted, add in flour and whisk for about 2 minutes [should have a paste consistency].

  8. Slowly whisk in beer [½ cup] and milk.

  9. Continue whisking until smooth and thickened.

  10. Turn the heat to low and slowly stir in shredded cheese, a little at a time, until melted.

  11. Add salt and pepper to taste! [I also sprinkle a little garlic powder]

  12. Stir in chives.

  13. If cheese is too thick, add in a little milk for a thinner consistency.

  14. For some extra kick we add in diced fresh jalapeños!!

To Serve:

  1. Warm pretzel buns in oven for a couple minutes at 350°, place shredded chicken on bottom bun, place cheese on top! Enjoy!

Ingredients

  • 2 8 oz. Packages of Cream Cheese
  • 2 c. Shredded Mozzarella Cheese
  • 1 lb. Spricy Ground Sausage [browned & drained]
  • 1 c. Frozen Corn
  • 2 cans Rotel

Instructions

  1. Mix all ingredients into crockpot and cook on low for 1-2 hours.

  2. Serve with tortillas chips. Enjoy!

This is my go-to queso recipe for all things cheesy! I serve it with chips, as part of a nacho/taco bar and baked on top of chicken enchiladas! So easy and tasty!

  • 1 lb White American Cheese Cubed
  • 1/2 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 cup Milk
  • 1/2 tsp Cumin

  • 1 can Diced Mild Green Chilis

Instructions

  1. Add all ingredients to Crock Pot. Cook on low for approximately 1.5 hours, until melted. Switch to Warm setting and serve with tortilla chips.

Beer Cheese Dip

Ingredients

  • 6 oz. Guinness Beer
  • 2 8 oz. Packages Cream Cheese [cubed]
  • 4 c. Shredded Cheddar Cheese

Instructions

  1. In a mini slow-cooker, combine Guinness, cream cheese, and cheddar. Cover and cook on low, stirring well every 10 minutes, until warmed through and creamy, about 1 hour. Enjoy!

Ingredients

  • 2 C Flour
  • 1 C Sugar
  • 3/4 C Unsweetened Cocoa Powder
  • 1 Tbsp Baking Powder
  • 1 C Almond Milk Can also use regular milk if desired
  • 1/4 C Vegetable or Canola Oil
  • 2 tsp Vanilla
  • 1 1/3 C Powdered Sugar
  • 1 C Peanut Butter
  • 3 C Boiling Water

Instructions

  1. Spray the inside of your crockpot to prevent sticking.

  2. In a bowl, mix together flour, sugar, cocoa powder and baking powder.

  3. Add milk, oil and vanilla to the dry ingredients. Stir until combined. Mixture will be very thick. Spread into crockpot.

  4. Add boiling water to a bowl. Stir in peanut butter until melted. Add powdered sugar. Pour on top of brownie mixture in crockpot.

  5. Cook on low for 3 hours.

  6. Optional: Serve with ice cream or fruit and whipped cream.

Sweet + Savory Mulled Apple Cider

Sweet + Savory Mulled Apple Cider

A slightly spicy, savory version of the classic fall favorite mulled apple cider.

Ingredients

  • 1/2 gallon apple cider tip: refrigerated + cloudy cider tastes best
  • 2 oranges sliced
  • 1 lemon sliced
  • 1½ tsp peppercorns
  • 2 bayleaves
  • 1 dried red chile pepper
  • 3-4 star anise
  • 3-4 cinnamon sticks plus more for serving
  • 1½ tsp whole cloves
  • 1 bunch fresh thyme

Instructions

  1. Add cider, one of the oranges, lemon, bay leaves, dried red chile pepper and cinnamon sticks into a slow cooker.

  2. Place peppercorns, whole cloves and star anise into a loose tea bag or cheesecloth bag. If none are available, feel free to add these ingredients directly into the cider as well.

  3. Heat on low for 4-6 hours, then turn to the keep warm setting.

  4. Remove mulling spice bag, citrus and other spices from the slow cooker.

  5. Add mulled cider to a mug and top with an orange slice, cinnamon stick and some fresh thyme. Enjoy!

Mulled Wine

French Vin Chaud (Mulled Wine)

Ingredients

  • 1 bottle red wine your preference
  • 1 orange sliced
  • 3 whole cinnamon sticks
  • 2-4 tbsp maple syrup
  • 1/4 cup brandy optional
  • few pinches nutmeg
  • few pinches whole cloves

Instructions

  1. Combine all ingredients in crockpot, cook on low 1-3 hours or until warm
