Brown your ground beef and drain excess fat.
Add your ground beef into your crock pot. Also add diced onion, diced red bell pepper, petite-cut diced tomatoes and your italian seasoning. Stir until combined.
Pour in beef broth, cover and cook on low for 6-8 hours or high for 3-4 hours.
Remove the lid and break the lasagna noodles into bite size pieces. Stir them completely in. Allow to cook uncovered for 30-40 minutes.
Grab some bowls, scoop some goodness in and then top with ricotta cheese, and a handful of mozzarella and the shredded parmesan cheese.
