Lasagna Soup

Ingredients

  • 1 lb Ground Beef
  • 1/2 Onion[diced]
  • 1 Red Bell Pepper[diced]
  • 1 can [14.5 oz] Petite-Cut Diced Tomatoes with Sweet Onions & Roasted Garlic
  • 1 can [28oz] Crushed Tomatoes
  • 1 TBSP Italian Seasonings
  • 1 package [12oz] Lasagna Noodles
  • 1/2 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 cup Shredded Parmesan Cheese

Instructions

  1. Brown your ground beef and drain excess fat.

  2. Add your ground beef into your crock pot. Also add diced onion, diced red bell pepper, petite-cut diced tomatoes and your italian seasoning. Stir until combined.

  3. Pour in beef broth, cover and cook on low for 6-8 hours or high for 3-4 hours.

  4. Remove the lid and break the lasagna noodles into bite size pieces. Stir them completely in. Allow to cook uncovered for 30-40 minutes.

  5. Grab some bowls, scoop some goodness in and then top with ricotta cheese, and a handful of mozzarella and the shredded parmesan cheese.

  6. Enjoy!
