Outdoor Hosting 101

Shawn and I are anxious for the weather to be consistently warm so we can start entertaining outdoors again! Whether it be friends, family, coworkers, or all of the above, one of our favorite things to do is have people over to our house and stuff our faces together with barbecue, yummy appetizers, and a cocktail or three. Thankfully the weather is starting to turn, so patio season will be here before we know it. I do believe I saw a forecast that include temperatures in the 80’s [which is great news since this week was still dipping into the 30’s]. And it’s all just in time, because Memorial Day is right around the corner, which means lots of get-togethers and family times, and of course, some great sales!

First on the Memorial Day party must-haves is a great outfit! Thankfully, jean shorts and a cute t-shirt fit the bill! You never know if you’re going to be inside, outside, sitting down, playing lawn games, in the sun, in the shade, and on and on and on. Basically, you need a versatile outfit that can be a great sidekick to any of those scenarios! These sandals are from one of my go-to brands as of late, because they’re SO comfortable and priced right! It doesn’t hurt that they’re in one of my favorite colors!

I might have a slight addiction to outdoor dishes and serving ware [there’s worse addictions to be had]. But you’re not going to see my apologizing for it anytime soon! With how often we eat meals on the patio, have drinks on the boat, or make s’mores around the firepit, I really feel like I just can’t ever have enough 😉 Plus it’s not my fault that every year they come out with cuter and cuter designs [I’m writing all of this to convince Shawn IT’S FINE!]. I tend to stick to dishes that are made of the Melamine material, which basically means I can trip over a rock outside and not worry about them shattering when they fall to the ground. Not that I’m clumsy or anything…..errr… I love the bright blue in these dinner plates paired with the amazing little appetizer plates– Kate Spade can do no wrong!

The Kabob of Summer

Finally, a Memorial Day party isn’t complete without a] the grill being used and b] delicious appetizers. So we’re killing two birds with one stone and making an appetizer on the grill to share with you today! Kabobs can really be customized to you and your guests’ liking, so you could switch things up to fit your taste buds! We chose a combination of cheese [always!], blackberry, prosciutto, and basil! While we may have singed some hairs from getting a wee bit too close to the grill, we’d say the end result was worth every lost hair! PS we used Kasseri Cheese, but it was a bit hard to come by. You could also use Provolone, mozzarella, Kefalotyri, Caciocavallo, and Scarmorza. We found this serving platter to be the perfect size for kabobs!

Flamin' Cheese Kabobs

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • Skewers
  • Cast Iron Skillet
  • Brandy
  • Kasseri Cheese
  • Basil Leaves
  • Blackberries
  • Prosciutto
  • Balsamic Glaze

Instructions

  1. Fire up that grill! Let the cast iron skillet get nice and toasty on it!

  2. Cut the cheese into 1” x 4” strips [approximate]. [you’ll be placing these on the grill and flipping, so you don’t want them too small!

  3. Pour a bit of brandy onto a plate and let the cheese soak in the brandy for 3-5 minutes, then flip to let the other side soak in it as well! It’s okay if it doesn’t get completely covered!

  4. Once the cheese is ready, place the cheese on the cast iron skillet.

  5. Just as you see the cheese starting to melt slightly, go ahead and flip it over with tongs.

  6. Once both sides are starting to melt, remove from grill.

  7. Assemble the blackberries, cheese, prosciutto and basil onto the skewers.

  8. Once all skewers are assembled, drizzle a balsamic glaze over the top

  9. Enjoy!

Now, all that’s left to do is fire up the grill and post up in a lawn chair!
