Le Creuset Stoneware Heritage Covered Casserole Dish

One of my favorite local coffee shops makes theee best baked oatmeal and it had me thinking I should try whipping some up at home! This baked oatmeal recipe is easy, delicious, filling, and a real crowd pleaser! I used blueberries, but feel free to swap out for your favorite fruit!

Blueberry Baked Oatmeal

Easy and delicious baked oatmeal sure to make a big splash at any breakfast or brunch!

Ingredients

  • 3 cups rolled oats
  • 1 cup brown sugar
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 2 tsp vanilla
  • 3/4 cup blueberries or fruit of choice

Instructions

  1. Preheat the oven to 350 degrees F 

  2. Mix together oats, brown sugar, cinnamon, baking powder, and salt in a large bowl.

  3. Beat in eggs, milk, melted butter, and vanilla extract. Stir in blueberries

  4. Spread into a 9×13-inch baking dish.

  5. Bake in the preheated oven until top is golden, about 40 minutes. Serve [with optional milk on top] and enjoy!
