I get it, dinner time can suck. The thought of rushing home from work only to sweat it out in the kitchen while making a mess all over yourself and the counters doesn’t always seem like the most exciting of tasks. Not to mention the time that it takes – oh the time. Recently I have been on the hunt for dinners that are not only quick to make but pretty mess-free and of course, delicious to eat. When opening up the whole wide world of Pinterest, I discovered the words “one pan dishes” “skillets” and the like. I was mesmerized. It turns out that you can put EVERY SINGLE INGREDIENT into one pan and cook it all together and come out with this amazing meal that feeds a lot of humans. Well played Pinterest, well played.
When I found this one pan cheesy sausage pasta dish, I knew I wanted to try my hand at it. Fortunately when I was perusing Target [it’s turning into a daily occurrence] I found this Hillshire Farm® Smoked Turkey Rope Sausage and knew that it was just what I needed to make my skillet dish a success. Sunday afternoon I cooked this up and two things – it couldn’t have been easier and it couldn’t have been more delicious. Dinner at home in 30 minutes or less, you’re welcome.
Ingredients:
1 Tablespoon olive oil
1 13 oz Hillshire Farm® Smoked Turkey Rope Sausage, cut into bite size pieces
1 small onion, chopped
1 green or red pepper, diced
2 cloves garlic, minced
2 cups chicken broth
1 can fire roasted tomatoes
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces rotini, uncooked
1/2 cup shredded cheddar cheese
1/2 cup shredded monterrey cheddar cheese
Green onions for garnish
Directions:
1. Heat olive oil in large non-stick skillet over medium high heat. Add in the chopped sausage, onion and pepper. Cook until the sausage is lightly brown and the onions and peppers are tender. Add the garlic and cook for another minute or two.
2. Stir in the chicken broth, diced tomatoes, heavy cream and rotini. Season with salt and pepper. Bring to a boil and reduce heat to simmer for about 15 minutes allowing the pasta to cook.
3. Stir in the cheeses and let melt. Once done, remove from the skillet, garnish with green onions and serve immediately.
I love dishes that provide plenty of leftovers for the week and this certainly did. The smoked turkey sausage has a great flavor that spices this pasta dish up perfectly. I promise if you like pasta and you like cheese, you won’t be disappointed. Now grab that fork and dig in, enjoy!
