Snuggled Up On Sundays [With a Side of Spicy Spinach and Artichoke Dip]

While I may be sitting poolside in California currently, one of my favorite ways to spend a weekend [okay you’re right, my current situation is definitely the most ideal] is curled up on the couch, cute comfy wear on, good food sitting in front of me, fire blazing and football on TV. Fortunately the other weekend, it all got to happen.
After six feet of snow get dumped on you in a single day, it leaves little options as to what to do other than – “HEY HUNNY! BUILD ME A FIRE! WE AREN’T LEAVING FOR THE NEXT 48 HOURS SO MAKE YOURSELF COMFORTABLE!” And so that’s what we did. I bundled up in my favorite Colts gear from the NFL shop [since when did sports gear get so fashionable? I’m loving this trend], whipped up some tasty spinach and artichoke dip
and made a day of staring back and forth between the fire and the game. Maggie was loving it just as much if not more than we were.

Because no weekend at home is complete without some type of dip, here you have it. Fair warning – this does have a little kick to it but it is incredibly delicious and should be a staple in your home moving forward. Forget flour and sugar, spinach and artichoke dip is moving in.

Spinach and Artichoke Dip with a Kick 
8 oz cream cheese
16 oz sour cream
1 stick unsalted butter
1 1/2- 2 cups shredded Parmesan cheese
14 oz quartered artichoke hearts, drained and chopped
4 oz can diced jalapenos, drained
10 oz spinach
2-3 garlic cloves, pressed

1. In a pan over medium heat, melt together the cream cheese, sour cream, butter and Parmesan cheese, stirring frequently until melted and slightly bubbling.
2. Stir in the chopped jalapenos, drained jalapenos, spinach and garlic cloves.
3. Remove from eat and serve with chips, Hawaiian bread or toasted baguettes. Enjoy!

Because I’m bound to believe that men love women the most when they are dressed in their favorite sports team apparel, I warmed up a bit by transitioning out of my cardigan and into my favorite Colts pullover hoodie, poured a hot cup of coffee, curled up under the blanket and let the heat of my computer radiate on my lap [great cheap and natural form of heat these days ;)] I love the NFL Shop and their trendy yet oh so comfy fan gear for cold weather apparel to keep us Indianapolis Colts fans happy and un-frozen.
