5 Ingredient Cacio e Pepe

HI FRIENDS, Katy here! I have lived in my fair share of apartments and now, our current home was built in 1929; so let’s just say the kitchen is a prettyyyy tight space and storage can be an issue! My husband and I love cooking together as a date night and today my friends, we are making Cacio e Pepe all with my Home Cook Duo. The Always Pan 2.0 and Perfect Pot are made with a Non toxic-non stick that’s better for you without PTFEs, PFOAs, lead, cadmium and other potentially toxic materials found in the majority of non-stick pans; which is very important to me! Cacio e Pepe (gluten free version)

Literally means “cheese and pepper,” this minimalist cacio e pepe recipe is like a stripped-down but adult version of mac and cheese!

NOTE: I did add broccoli and chicken to mine to spruce it up!

Servings 2 servings

Ingredients

  • 6 oz Your Choice Of Pasta I used Organic Red Lentil Sedanini for a gluten free version!
  • 3 tbsp unsalted butter cubed & divided
  • 1 tsp freshly cracked black pepper
  • 3/4 cup Grana Padano or Parmesan finely grated
  • 1/3 cup Pecorino

Instructions

  1. Bring 3 quarts water to a boil in a 5-qt. pot. Season with salt; add pasta and cook, stirring occasionally, until about 2 minutes before tender. Drain, reserving ¾ cup pasta cooking water.

  2. Meanwhile, melt 2 Tbsp. butter in a Dutch oven or other large pot or skillet over medium heat. Add pepper and cook, swirling pan, until toasted, about 1 minute.

  3. Add ½ cup reserved pasta water to skillet and bring to a simmer. Add pasta and remaining butter. Reduce heat to low and add Grana Padano, stirring and tossing with tongs until melted. Remove pan from heat; add Pecorino, stirring and tossing until cheese melts, sauce coats the pasta, and pasta is al dente. (Add more pasta water if sauce seems dry.) Transfer pasta to warm bowls and serve.

While my pasta is boiling in the Perfect Pot (tomorrow night’s recipe is a roasted chicken in here!). I am steaming the broccoli in the Always Pan 2.0! Once that was done, I cooked my chicken, and made my sauce also all in the Always Pan 2.0!

Other cookware I have used in the past have been difficult to pick up and move around the kitchen, but these are so lightweight and easy to use! I LOVE that the Perfect Pot has a built-in strainer.
