Protein Whoopie Pies

A classic favorite sweet treat, but with less of the sweet and more of the protein please!

Ingredients

  • 1/2 cup oat flour I just blended oats in a blender!
  • 1/4 cup cocoa powder
  • 1 scoop chocolate protein powder
  • 1/4 tsp baking soda
  • pinch salt
  • 1/4 cup applesauce
  • 3 tbsp honey or maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 1-2 tsp almond milk optional if dough is too dry

Filling

  • 1/4 cup cottage cheese blended until smooth
  • 1 scoop vanilla protein powder
  • 1-2 tsp honey
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees

  2. Mix everything until it's a large dough ball and then roll into 16 balls and flatten

  3. Bake for 6 minutes

  4. After cooled, sandwich 1-2 tbsp of filling between two cookies
