High Protein Rotel Queso Dip

Ingredients

  • 1 16oz container cottage cheese
  • 1/4 cup nutritional yeast
  • 3 tbsp taco seasoning
  • 1 lb ground beef
  • 1 10oz can rotel not drained
  • 2-3 tbsp milk or water if needed

Instructions

  1. Blend cottage cheese, nutritional yeast, shredded cheddar, and taco seasoning in a blender or food processor and set aside. *add a splash of milk if needed while blending. Some brands of cottage cheese are thicker. 

  2. In a skillet over medium heat, cook and crumble beef until cooked through. 

  3. Place cheese mixture, rotel, and cooked beef in the slow cooker on warm and stir. It can sit for hours and stay warm. Stir occasionally!

  4. Serve with your fave tortilla chips and/raw veggies. If feeding a crowd, double or triple the recipe!
