Quick to make - and the most delicious slightly sweet surprise. Perfect to serve hot straight from the oven or in a small slow cooker.
Over medium-high heat, melt 1 Tbs Butter. Add Kernel Corn and saute for 3-5 minutes.
Add Cream Corn, Cumin and Chili Powder and cook for an additional 3-5 minutes over medium heat.
Add Mayonnaise, Crema Mexicana, half a wheel of Queso Fresco crumbled and juice from 1/2 Lime (or 1.5 Tbs of bottled juice). Cook for an additional 3-5 minutes to thicken slightly and blend flavors.
Pour into mini slow cooker or serving dish. Top with additional crumbled Queso Fresco and a sprinkle of Chili Powder. Serve with tortilla chips.
