Drain and rinse jackfruit, use hands or meat masher to break up jackfruit and remove any hard centers or "cores."
In a skillet in medium heat add shredded jackfruit with a neutral oil. Add garlic and onion powder and saute for 1-2 minutes.
Add 2-3 chipotle peppers to sauce pan [for extra spice add some of the adobo sauce in as well!] Stir well and saute for another 1-2 minutes.
Add your taco seasoning or spices of choice and saute for 10 minutes.
Cover sauce pan and return heat to low heat.
Use about 1 Tbsp of refried beans and spread across a tortilla.
Add 1½ Tbsp of jackfruit to tortilla [be sure to spread it out evenly!] Roll tortilla tightly and set in wire rack.
Repeat process until all of jackfruit is used!
Spray a neutral oil on rolled tortillas before placing into the air fryer.
Select air fry and set to 400 degrees for 5 minutes. Once time is up use your judgement and preference if you wish to cook taquitos longer.
Remove from air fryer, serve and enjoy!
Drain and rinse corn, add to a large mixing bowl.
Combine vegan mayo, nutritional yeast, and spices and stir.
Keep cool until ready to serve!
Add all ingredients to a blender and blend on high for about 2 minutes.
