Preheat oven to 375
In a large pot boil sweet potatoes in salted water for about 10-12 minutes (until soft)
Drain the water from the pot and add Ghee
Use potato masher to mash the potatoes until soft consistency; set aside
In a large pan, heat 2 Tbsp of ghee.
Add onions, celery, and carrots and cook for 5 min stirring.
Add the meat, thyme, oregano, and garlic powder and saute for 10 min stirring; until meat is cooked through.
Spoon meat mixture evenly over the bottom of a casserole dish.
Spread sweet mashed potatoes over the top.
Roast in the oven for 30 minutes. (I like to add a sprinkle of coarse salt to the top of the casserole before putting it in the oven.)
